Valentine’s Day is right around the corner and whether you have someone special to share it with or not, this year is all about ‘Galentine’s’. If you’re not familiar with the new ‘holiday’, it’s held on February 13th and it’s a day exclusively for girls to spend time with their best pals. So this year, we’re ditching our fancy dresses for P.J.’s and hosting girls night in! Don’t worry – we’re keeping the bubbly, and cocktails, of course.

Desserts and cocktails are on the menu for our Galentine’s. Our signature cocktail for the night is our exclusive Sexy City Cosmo, and we’ll be serving up our Raspberry Trifle Shots for dessert (recipe below)! The best part? Our selections will compliment pieces from our NYC Party Collection perfectly.

Raspberry Trifle Shots – Yields 12 Servings 

Ingredients

  • 1/4 Cup Sugar
  • 1/8 Cup Fresh Lemon Juice
  • 1/2 Cup Seedless Raspberry Jam
  • 2 Cups Fresh Raspberries (Reserve 12 for Garnish)
  • 3/4 lb Pound Cake
  • 1/8 Cup Water
  • Prepared Whipped Topping (Cool Whip)
  • Mini Chocolate Chips

Directions

  1. In a small saucepan bring sugar, water and lemon juice to a boil, stirring to dissolve sugar, 1-2 minutes. Let cool.
  2. In a small bowl, combine jam with 1 1/2 cups raspberries, mashing slightly.
  3. Slice pound cake into 1/2 inch thick cubes and coat in lemon syrup.
  4. Build trifles in separate appetizer mini glasses, starting with the pound cake in the bottom of the shot glass. Gently spread a layer of raspberry mixture, then whipped topping and a few mini chocolate chips. Garnish with fresh raspberry.
  5. Refrigerate until ready to be served, up to 24 hours in advance!
