Yield:  12 servings


  • 2 cups lobster
  • Coarse salt and freshly ground pepper
  • 1 tbsp snipped chives
  • 1 tbsp chopped fresh dill, plus more for garnish
  • 1/4 cup low-fat mayonnaise
  • 1 tbsp freshly squeezed lemon juice
  • 2 ribs celery, finely chopped

  1. Preheat oven to 350 degrees and cook lobster for 25 minutes or until an internal temperature of 140 degrees. Remove meat from shell, and cut into large chunks.
  2. In a medium bowl, combine chives and dill with mayonnaise, lemon juice and pepper to taste.
  3. Add celery, lobster meat and mix well.
  4. Place lobster salad on each spoon. Garnish with a sprig of chive, and serve.


Note:  The lobster can be prepared up to four hours ahead and kept refrigerated in an airtight container.
