My friends and I planned a birthday celebration for our good friend Cheryl at the lake last weekend, and I wanted to make something special for her. I had a recipe for a Jell-O dessert that my husband’s sweet Aunt use to make and it has always been a favorite of mine. I thought this would be the perfect occasion to make it–with slight modifications, of course! The recipe calls for a 9×12 glass baking dish but I had these fun, tall shot glasses I’ve been anxious to use. AND, instead of cold water I used cold vodka! What’s a celebration at the lake without vodka?

I wanted to serve the Jell-O shot parfaits in a fun way, so I lined all of the shot glasses up on our paddle board – my new favorite toy – making it easy to serve to friends who were swimming. Everyone swam up to the board to enjoy the tasty treat and celebrate with Cheryl! It was a great day on the water to say the least!

Here’s my version of the recipe:

Ingredients:

3 oz boxes of Lime, Orange, Lemon and Cherry flavored Gelatin
2 cups Milk
1 cup Sugar
2 envelopes unflavored Gelatin
1 tsp Vanilla
2 cups Sour Cream

  1. Mix one box of Gelatin at a time, beginning with the Lime flavor. Add Gelatin to 1 cup hot water and mix until dissolved. Add 1/2 cup of cold Vodka and mix. Pour as evenly as possible (if you can) into a tall shot glass. Let each layer harden before adding the next, approximately 1 hour (I got impatient and stuck them in the freezer to firm them up before adding the next layer and it really shorten the prep time).
  2. Between each flavored gelatin layer, add a layer of the Sour Cream mixture. To prepare the mixture boil the milk, add the sugar and dissolve. Next, dissolve unflavored gelatin in 1/2 cup cold water and add to milk and sugar. Add vanilla. Remove from stove and add sour cream. Using an electric mixer, mix until smooth. (Surprisingly this will not harden while you make each layer. Just do not refrigerate it).
  3. Next pour a layer of the Sour Cream Mixture in each glass and let the layer harden. (I used a funnel to keep the mixture from touching the sides of my glasses).
  4. Repeat steps 1 and 3 so your layers come out like this:
    Layer 1 – Lime
    Layer 2 – Sour Cream Mixture
    Layer 3 – Orange
    Layer 4 – Sour Cream Mixture
    Layer 5 – Lemon
    Layer 6 – Sour Cream Mixture
    Layer 7 – Cherry

After the last flavor, be sure to allow them to harden in your refrigerator for at least 2 hours.
